Today’s recipes feature two new additions to the Tostitos® tortilla chips line-upTostitos® Cantina Thin & Crispy tortilla chips and Tostitos® Cantina Traditional tortilla chips. Cantina Egg Rolls featuring Tostitos Cantina Traditional tortilla chips and Tostitos Cantina Roasted Garlic Thick & Chunky Salsa #FritoLayHoliday

Yields 20 egg rolls

3 large chicken breasts, cooked and diced
1 medium onion, diced
1 green bell pepper, diced
1-1/2 cups black beans, drained and rinsed
1 cup corn
1 clove garlic, minced
2 jalapeños, seeded and diced
1 tablespoon chili powder
1 teaspoon cumin
1 cup shredded cheese (cheddar or pepperjack work well)
20 spring roll wrappers
1 egg, beaten

Preheat oven to 425 degrees. In a skillet pan on medium heat, add 1 tablespoon oil, diced chicken, onion, bell peppers, black beans, corn, garlic, jalapenos, chili powder and cumin. Stir until onions and peppers soften. Remove from heat and drain. Stir in cheese until combined.

With point of spring roll wrapper facing towards you (diamond shaped), place heaping spoonful of filling mixture in center of wrapper. Fold over, tucking as you roll, until about 1 inch of wrapper remains. Brush last inch of wrapper with beaten egg and finish rolling. Brush beaten egg over top of egg roll to seal completely.

Lay prepared egg rolls on baking sheet and bake in oven for 15-20 minutes (flipping over half-way through). Let cool slightly before eating, as filling will be hot. Dip eggrolls, along with Tostitos® Cantina Traditional tortilla chips, into Tostitos® Cantina Roasted Garlic Thick & Chunky Salsa and enjoy!

Stuffed Peppers featuring Tostitos Cantina Thin & Crispy tortilla chips and Tostitos Cantina Chipotle Restaurant Style Salsa #FritoLayHoliday

Yields 8 stuffed half-peppers

4 bell peppers
1 large onion, diced
3 Roma tomatoes, diced
2 jalapeño peppers, seeded and diced
1 (15-ounce) can black beans, drained
2 cups cooked rice
1 cup shredded Pepper Jack cheese

Preheat oven to 350 degrees. Mix together onion, tomatoes, jalapeño peppers, black beans, cooked rice and 1/2 cup of shredded Pepper Jack cheese. Stir until combined.

Cut each bell pepper in half, length-wise, and remove inside seeds. Lay peppers flat on baking sheet. Stuff peppers with rice and bean mixture, and top each with remaining cheese.

Cover and bake in oven for 25-30 minutes or until roasted. If desired, remove covering for last five minutes to allow cheese to turn golden brown.  Serve peppers alongside Tostitos® Cantina Thin & Crispy tortilla chips and Tostitos® Cantina Chipotle Restaurant Style Salsa.
