“Goblin” Artichoke Cream Soup

3/4   cup onion, chopped finely
3/4   cup celery, chopped finely
1/4   cup green bell pepper, chopped finely
6  tablespoons butter
6  tablespoons flour, all-purpose
6   cups chicken broth
1/4   cup fresh lemon juice
2  bay leaves
1/2  teaspoon ground thyme
2    14-ounce cans artichoke hearts, drained & chopped
2   cups half & half cream
2   egg yolks, beaten
few drops of green food coloring
Optional:  lemon slices & chopped parsley for garnish

Saute the onions, celery and green bell peppers in the butter until tender, about 10 minutes.  Add the flour and cook, stirring constantly for one minute.  Slowly add the chicken broth and lemon juice, stirring until thickened, about 20 minutes.  In a medium-size bowl combine the cream and egg yolks and mix until well blended.  Pour a small amount of the hot soup into the egg mixture and whisk to combine.  Then pour the remaining egg mixture into the hot soup and continue whisking.  Remove the bay leaves and pour the soup in batches into a blender or food processor.  Process until smooth.  Serve immediately; garnish with lemon slices and parsley.  If you need to reheat the soup before serving, do not let it come to a boil.

      Jeanie:
I looked at the bottom of mine (got these last year) and it has
Carole Eldridge by Silvestri on the bottom. Went to google and
all I could find was – http://www.christalaccents.com but still not the
stands — so I can not help — but solid white would work using
halloween ribbon around the edges — also the christalaccents site
had some cute things. Thanks and have a fun halloween!
