Lemon/Orange Citrus Table

Celebrate citrus! Citrus tastes delicious in recipes and make refreshing centerpieces.    Creating these centerpieces is as easy as filling a bowl or vase with lemons.

Why not serve your favorite chicken or pasta salad and this Tangy Mandarin Orange Salad?  This recipe has always been one of my favorites and is perfect for this table setting.

Tangy Mandarin Orange Salad

1  large (6-ounce)  package of orange jello
1  1/2 cups boiling water
2   6-ounce cans frozen orange juice, thawed and undiluted
2   11-ounce cans mandarin oranges and the juice

Mix these ingredients until well blended.  Mold and refrigerate until congealed.
Serves: 8 to 10

The  lemon chess pie was made by Ukrop’s HomeStyle Foods out of Richmond, Virginia.  If you don’t  live in Virginia then the following recipe is my favorite.

Lemon Chess Pie

2   2/3 cups sugar
1 tablespoon plus 1 teaspoon plain white cornmeal
1 tablespoon plus 1 teaspoon flour
6 eggs, room temperature
6 tablespoons butter, melted
2 teaspoons lemon zest
1/3 cup fresh lemon juice
1/3 cup milk
2   9-inch pie shells, unbaked

Combine the sugar, cornmeal and flour in a large bowl.  Add eggs one at a time and beat on medium speed until mixture is pale yellow and slightly foamy.  Add the butter, lemon juice, milk and continue to beat until well blended.  Fold in the zest.  Divide mixture equally between the two pie shells.  Use the regular pie crusts, not the deep dish variety.  Bake at 325 for 45 minutes or until filling is light brown on top.  Cool and refrigerate.  Yields:  2 pies or 16 servings
