Poppy Seed Muffins with Orange Glaze
3 cups flour, all-purpose
2 1/3 cups sugar
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
3 eggs
1 1/2 cups milk
1 1/8 cups vegetable oil
2 tablespoons poppy seeds
1 1/2 teaspoons vanilla
1 1/2 teaspoons almond extract
1 1/2 teaspoons lemon juice
Thoroughly mix all the muffin ingredients until well blended. Fill each muffin tin a little more than half full. Bake at 400 for 20 to 25 minutes.
Orange Glaze
1/2 cup butter, softened
1 box powdered sugar (3 cups)
6 tablespoons of orange juice concentrate, thawed and undiluted
2 tablespoons lemon juice
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 tablespoon orange zest
Mix all the ingredients together and beat until smooth. Spoon the glaze on cooled poppy seed muffins.
Yields: 24 regular muffins
