Cocktails Before the Symphony

Bellini champagne and delicious marinated shrimp will be the star attraction for cocktails with friends before the symphony or a night out on the town. Gather around the piano and let the good times roll!

Bellini Champagne

1 peach, pureed (or 4 oz of peach nectar)
8 oz champagne
dash of grenadine

Pour pureed peach into bottom of tall fluted glass.  Slowly add champagne and top with dash of grenadine.  Do not stir – it will destroy the bubbles!

Unforgettable Marinated Shrimp

1 teaspoon ground oregano
1 teaspoon ground mustard
1 teaspoon crushed thyme
2 teaspoons sugar
3 teaspoons salt
1 teaspoon pepper
1/4 teaspoon red pepper
1 cup Crisco oil
1/2 cup lemon juice
1/2 cup water
1 cup white wine vinegar
1/2 cup green bell pepper
2 small onions – chopped
2 ripe avocados – thinly sliced
2 pounds shrimp, cooked peeled and deveined
Combine all the ingredients except the shrimp until well blended. Add the shrimp and refrigerate overnight. Marinated shrimp gets better overnight. Be sure to have lots of toothpicks. This is a great recipe to do ahead of time and enjoy later with your friends.
