I‘ve been on a coastal kick lately, can you tell? Something about summer just has me thinking about the beach and seafood all the time. Since my husband and I don’t actually have a beach trip planned this summer (I need to change that, clearly), I decided to make him a coastal treat to enjoy right here in Nashville. Behold these delicious mini spicy shrimp po’ boys! He loves the fact that they’re spicy and of course I love that they’re “mini” – perfect for parties! Sriracha (his fave) gives the aioli a serious kick too! These are a great weekend dinner to enjoy as well as a fun backyard party food to serve up to friends and neighbors.
One problem I always seem to have with po’ boy type sandwiches is whenever I pick them up, they just fall apart. Problem solved, y’all! First, minis keep things in tact better because it’s not so huge. Second, I tied a little bit of raffia around to keep them together. I love the presentation it gives them! Guests can easily grab one along with other foods without worrying about runaway shrimp!
We have been loving these po’ boys, and I know they’ll be a summer staple at our house. The fact that they’re easy is a must for summer since I don’t want to be stuck in the kitchen all day. These spicy shrimp po’ boys are the perfect solution! I hope you’re inspired to try them soon! I’m so thrilled to be working with SeaPak so stay tuned for more shrimp recipes throughout the year!
