Enjoy the spring weather and invite some friends over to enjoy dessert outside! Baked Alaskas, also known as glace au fours, are the perfect treat when served in flower pots!
Individual Baked Alaska in Flower Pots
1 3 1/2-inch clay flower pot, one for each guest
1 pound cake, sliced 1/2-inch thick (find our recipe here)
1 gallon ice cream, your favorite
1 recipe for Never Fail Meringue
In a large saucepan, boil the clay pots in water for 20 to 25 minutes to sterilize. Remove the pots and allow to cool and dry. Cut small circles of pound cake and fit them into the bottom of the pots. Add a scoop or two of your favorite ice cream. Place in the freezer to let the ice cream firm up before topping with meringue. Make a recipe of Never Fail Meringue. Spread the meringue over the top of the flowerpots. Be sure to spread to the edges of the pots to form a seal. Bake the meringue at 350 for 7 to 10 minutes, just enough to brown the peaks. Optional: Push a plastic floral tube with a small fresh flower into the center of each pot.
Never Fail Meringue
3 egg whites
2 tablespoons cold water
1 tablespoon cornstarch
1/2 cup boiling water
6 tablespoons sugar
1 teaspoon vanilla
1/8 teaspoon salt
Let the egg whites stand at room temperature for 30 minutes before beating. Combine the cold water and cornstarch in a saucepan and then add the boiling water. Cook until thickened and clear appearance and then cool. Beat egg whites until foamy and add sugar. Beat again until stiff. Next add the vanilla, salt and cold cornstarch mixture and beat until well mixed.
