Growing up on the coast, seafood has always been one of my favorite types of food! I always like to have a handful of really great seafood appetizers on hand for parties throughout the year. A lot of people tend to only make seafood dishes in the summer when they’re at the beach or thinking about all things coastal, but you can and should enjoy it year round! October happens to also be National Seafood Month. The ingredients for this shrimp scampi ceviche are easy to have on hand and wow your guests with a light but flavorful appetizer!

Something else I love about easy recipes like this is that they oh so pretty! The colors are so vibrant in the onions and cucumbers. Plus, the shrimp scampi has its own seasonings right on it so you don’t have to worry about getting that perfectly right. They taste absolutely delicious! You can also use extra sauce from the shrimp scampi in your ceviche! I love to serve things “mini style” but you can absolutely serve this in a larger bowl, of course. Easy and delish Shrimp Scampi Ceviche!

Party Appetizer: Shrimp Scampi Ceviche Recipe

Enjoy this flavorful recipe for a delicious party appetizer, shrimp scampi ceviche!
SERVINGS 6 appetizer size

Ingredients
  

  • 1 package Seapak Shrimp Scampi
  • 1/2 red onion - thinly sliced
  • 1 cucumber - thinly sliced
  • 1/2 cup cilantro - chopped
  • 1/4 cup lime juice
  • 1/4 cup lemon juice
  • salt and pepper to taste

Instructions
 

  • Prepare shrimp scampi on stovetop according to package instructions.
  • Once cooked, combine with sliced onion and cucumber.
  • Toss with lime and lemon juice.
  • Add cilantro and salt and pepper to taste.
  • Toss gently to mix.
