Mini Spicy Shrimp Po' Boys! My family loves these!

I‘ve been on a coastal kick lately, can you tell? Something about summer just has me thinking about the beach and seafood all the time. Since my husband and I don’t actually have a beach trip planned this summer (I need to change that, clearly), I decided to make him a coastal treat to enjoy right here in Nashville. Behold these delicious mini spicy shrimp po’ boys! He loves the fact that they’re spicy and of course I love that they’re “mini” – perfect for parties! Sriracha (his fave) gives the aioli a serious kick too! These are a great weekend dinner to enjoy as well as a fun backyard party food to serve up to friends and neighbors.

One problem I always seem to have with po’ boy type sandwiches is whenever I pick them up, they just fall apart. Problem solved, y’all! First, minis keep things in tact better because it’s not so huge. Second, I tied a little bit of raffia around to keep them together. I love the presentation it gives them! Guests can easily grab one along with other foods without worrying about runaway shrimp!

Mini Spicy Shrimp Po' Boys

Enjoy this recipe for delicious mini spicy shrimp po' boys!
Servings 6 shrimp po' boys

Ingredients
  

  • 1 12 oz. package Seapak Popcorn Shrimp
  • 2 roma tomatoes thinly sliced
  • 4-6 leaves lettuce
  • 1 red onion thinly sliced
  • 6 mini hoagie rolls sliced in half

For the Spicy Aioli:

  • 1/2 cup mayonnaise
  • 1 clove garlic crushed
  • 1/2 teaspoon lemon juice
  • 2 teaspoons paprika
  • 1 teaspoon dijon mustard
  • 2-3 teaspoons Sriracha sauce more or less depending on how spicy you like

Instructions
 

For the Spicy Aioli:

  • Combine all ingredients and stir well. Refrigerate until ready to spread on po' boys.

Prepare Po' Boys:

  • Bake popcorn shrimp according to instructions.
  • Place a tomato slice, red onion slice, and lettuce on each hoagie roll.
  • Spread with aioli sauce and top with popcorn shrimp (about 6-8 per roll).
