  • 3 cups old-fashioned oats
  • 1 cup chopped California Walnuts
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 cup unsweetened, shredded coconut


  1. Preheat oven to 300 degrees F. 

  2. In a large mixing bowl, combine oats and walnuts. 

  3. In a separate, microwavable bowl, melt coconut oil. Whisk together with maple syrup, honey, and vanilla extract. Pour over oats and walnuts. Stir together to combine. 

  4. Sprinkle on cinnamon. 

  5. Spread out on a parchment-lined baking sheet and bake for 40 minutes, tossing with a spatula ever 10 minutes. 

  6. After 40 minutes, pull out granola, sprinkle on the unsweetened coconut, turn oven off, and return baking sheet to oven. This gives the coconut a slight toast while the granola cools.
