Full of ginger and molasses flavors, these chewy cookies are perfect for the Christmas holidays!
Preheat oven to 350 degrees and line a baking sheet with parchment paper. Set side.
In a stand electric mixer with a paddle attachment, cream together butter and sugar (about 2 minutes).
Add in egg and beat until mixed. Add in molasses and vanilla extract, beating to combine.
In a separate mixing bowl, combine flour, salt, cinnamon, cloves, ginger, nutmeg, and baking soda. Stir well to combine.
Slowly add the flour mixture to the stand mixing bowl with your wet ingredients. Mix until all is combined.
Roll into 1-2" balls. You can roll the balls in extra granulated sugar if you want. Place on baking sheet and bake for 8 to 10 minutes or until set. Be sure not to over-bake.
