Cut out star shapes in Puff Pastry Sheets (thawed).
Beat 1 egg with 2 tablespoons water and brush stars with egg wash. Finish with granulated sugar crystals. Bake for 5-6 minutes or until golden brown (watch carefully).
Beat together pudding mix with heavy whipping cream with electric mixer for 2 minutes on low and 2 minutes on medium-high, until fluffy. If too thick, stir in milk.
Spoon (or pipe) mousse into mini martini glasses and garnish with mini chocolate chips. Add a sugared star on top!
