How to Make Mojito Popsicles!

Summer might be on it’s way out the door but it’s time for one last summer fling (hello Labor Day). The heat is definitely still around (at least here in Tennessee) so I whipped up some boozy popsicles to beat the heat. BACARDI was nice enough to send over some of their new Classic Cocktails Light to try in both Pina Colada and Mojito flavors. Perfect, I think, for my popsicle flavors! These cocktails are pre-mixed so alcohol is included. In fact, the percentage is perfect because they freeze beautifully.

It’s that easy! You don’t even need popsicle molds. I just used plastic cups and did not even have to run them under warm water. A gentle tug on the craft stick pulled them right out! Pop a dozen of these in an ice bucket for the perfect Labor Day cocktail treat. I look forward to trying these in BACARDI’s Pina Colada flavor too!
