Vanilla Buttercream Frosting
1cupunsalted buttersoftened to room temperature
4-5cupspowdered sugar
2tbspmilk or heavy cream
1/4tspsalt
1/2tspvanilla extract
Instructions
Make Brownie Bites
Preheat your oven according to brownie mix instructions on the box. Lightly grease a mini-muffin pan.
Follow the instructions on the brownie mix box to prepare the batter
Spoon the brownie batter into the mini muffin pan, filling each cup about 2/3 full. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely in the pan before removing.
Make Vanilla Buttercream Frosting
In a large bowl, beat the softened butter until creamy, about 2 minutes.
Gradually add the powdered sugar, 1 cup at a time, beating well after each addition.
Add the milk and vanilla extract, and beat the mixture on medium speed until light and fluffy. If the frosting is too thick, add an extra teaspoon of milk until you reach the desired consistency. If frosting is too loose, add another 1/4 cup of powdered sugar.
Frost the Ghosts
Transfer the vanilla buttercream into a piping bag fitted with a large round tip. Pipe the frosting in a swirl pattern to create the ghost shape on top of each brownie bite.
Place two mini chocolate chips on each frosting ghost to create eyes.
