How to Make Ghost Brownie Bites
- Using either a homemade brownie recipe, box brownies or store-bought brownie bites, set them on a platter or Halloween tray.
- Fill a piping bag with vanilla buttercream frosting and snip the corner off (or use a round piping tip) and swirl on the frosting on the brownie bites.
- Add mini chocolate chips on the frosting for the ghost eyes!
Tips for Making Ghost Brownie Bites:
Chill the Brownie Bites: Pop the brownie bites into the fridge for about 10 minutes before frosting. This helps the buttercream keep its shape when piped.
Buttercream Consistency: If the buttercream seems too soft or runny, add more powdered sugar (start with 1/4 cup) until it holds its shape. If it’s too stiff, mix in a little more milk or heavy cream.
Swirl with Style: When piping the frosting, swirl around and upward to make the ghost shape.

Ghost Brownie Bites
Ingredients
- 1 box brownie mix - and included ingredients listed on hte box (usually eggs, oil and water)
- 1/4 cup mini chocolate chips - (for the eyes)
Vanilla Buttercream Frosting
- 1 cup unsalted butter - softened to room temperature
- 4-5 cups powdered sugar
- 2 tbsp milk or heavy cream
- 1/4 tsp salt
- 1/2 tsp vanilla extract
Instructions
Make Brownie Bites
- Preheat your oven according to brownie mix instructions on the box. Lightly grease a mini-muffin pan.
- Follow the instructions on the brownie mix box to prepare the batter
- Spoon the brownie batter into the mini muffin pan, filling each cup about 2/3 full. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely in the pan before removing.
Make Vanilla Buttercream Frosting
- In a large bowl, beat the softened butter until creamy, about 2 minutes.
- Gradually add the powdered sugar, 1 cup at a time, beating well after each addition.
- Add the milk and vanilla extract, and beat the mixture on medium speed until light and fluffy. If the frosting is too thick, add an extra teaspoon of milk until you reach the desired consistency. If frosting is too loose, add another 1/4 cup of powdered sugar.
Frost the Ghosts
- Transfer the vanilla buttercream into a piping bag fitted with a large round tip. Pipe the frosting in a swirl pattern to create the ghost shape on top of each brownie bite.
- Place two mini chocolate chips on each frosting ghost to create eyes.
