Instructions
Preheat oven to 350℉ and line a baking sheet with parchment paper.
In a large mixing bowl, combine flour, baking soda, salt and cream or tartar. Set aside.
In the bowl of an electric mixer with paddle attachment, beat butter on medium for 1-2 minutes or until light and fluffy.
Add in sugar and beat for 2-3 minutes.
Add in egg, egg yolk, vanilla extract and almond extract. Cream together for another 1-2 minutes. Be sure to scrape down the sides of the bowl periodically.
Scoop out 2 inch balls of the sugar cookie dough. You can roll in extra sugar if you like. Set on parchment paper and bake for 12-14 minutes. Set aside to cool.
Cut ice cream with a round cookie cutter the same size as your cookies (about 2 1/2 inches) and place each round between two sugar cookies.
Keep peach ice cream sandwiches frozen until ready to enjoy!
