Ya’ll are in for a TREAT today! We have Tessa of The Frosted Cake Shop swinging in to share some Ballpark-themed cupcakes sure to please the crowds! From Cracker Jacks to Beer + Nuts, you’ll have all the recipes you need for baseball park inspired cupcakes! The recipes are listed with cake + frosting ingredients, and they are to be made in the typical “cupcake” fashion (however, let us know if you have questions). My personal fave? CANDY BAR COMPOST – it’s a HOME RUN!Â

CARAMEL CRACKER JACK CUPCAKE
Vanilla Butter Cake
1 cup unsalted butter, softened
2 cups granulated sugar
6 egg yolks
1 Tablespoon vanilla extract
3 cups cake flour- sifted
1 Tablespoon + 1/2 teaspoon baking powder
3/4 teaspoon salt
1 1/2 cups milk
Caramel Buttercream
1 cup unsalted butter, softened
3/4 cup brown sugar
3 1/2 cups powdered sugar, sifted
2 Tablespoons dark corn syrup
3 Tablespoons milk
Top with a pyramid of Cracker Jacks, and drizzle with caramel.
ICE CREAM SUNDAE CUPCAKE
Classic Chocolate Cake
1/2 cup safflower oil
2 1/2 cups sugar
2 whole eggs + 1 egg yolk
1 teaspoon almond extract
1 teaspoon vanilla extract
2 1/2 all purpose flour, sifted
1 1/4 cup unsweetened cocoa
2 1/2 teaspoons baking soda
1 1/4 teaspoons salt
1 1/4 cups milk
1 1/4 cups coffee
 Vanilla Italian Meringue Buttercream
2 cups granulated sugar
1/2 cup water
6 ounces egg white
6 sticks unsalted butter, softened
2 teaspoons pure vanilla extract
 Drizzle with chocolate ganache or syrup and top with you favorite sundae toppings!
 Chocolate Ganache
16 ounces semi-sweet chocolate, chopped
8 ounces heavy cream
BEER & NUTS CUPCAKE
 Guinness Stout Chocolate Cupcake
1 cup Guinness Stout Beer
2/3 cup sour cream
10 Tablespoons unsalted butter
2 eggs
1 Tablespoon vanilla extract
1 teaspoon almond extract
2 cups all purpose flour
2 cups sugar
2 1/2 teaspoon baking soda
 Peanut Butter Buttercream
1/2 cup smooth peanut butter
2 sticks unsalted butter, softened
4 cups powdered sugar, sifted
2 teaspoons vanilla extract
CANDY BAR COMPOST

2 sticks (1 cup) unsalted butter, softened
2 cups sugar
6 egg yolks
1 Tablespoon vanilla extract
3 Â cups cake flour, sifted
1 Tablespoon + 1/2 teaspoon baking powder
3/4 teaspoon salt

2 sticks (1 cup) unsalted butter, softened
1 cup unsweetened cocoa powder
3 1/2 cups powdered sugar
3 -5 Tablespoons milk, for desired consistency
2 teaspoons vanilla extract
pinch of salt
1 cups of your favorite mix-ins, chopped (I used toffee bits, chocolate chips, and peanuts)
 Top with an assortment of candy bar goodies!
Suggested toppings include:
– toffee bits
– candy coated chocolate pieces
– crushed peanuts
– mini chocolate chips
– white chocolate chunks
– butterscotch chips
 VERY, BERRY COTTON CANDY CUPCAKE
Vanilla Butter Cake
2 sticks (1 cup) unsalted butter, softened
2 cups sugar
6 egg yolks
1 Tablespoon vanilla extract
3 Â cups cake flour, sifted
1 Tablespoon + 1/2 teaspoon baking powder
3/4 teaspoon salt
1 1/2 cups milk
Strawberry Cream Frosting
1 1/2 sticks unsalted butter, softened
1/4 cup cream cheese
4 cups powdered sugar, sifted
2 teaspoons milk
1/4 cup strawberry jam or 3 Tablespoons strawberry puree
 Top with fluffy cotton candy!

Just a few quick questions. I’d like to make the Guinness cupcakes for an upcoming party. The cupcakes are listed as chocolate in the title, but there’s no chocolate ingredient listed – how much is needed? Also, how long and at what temperature did you put these in for? I don’t make cupcakes often enough to know. Sounds fantastic, though, and it’s breaking my husband’s heart to know we have to pick up his favorite beer to make these. : ) Thanks!
Chelsie- Yes, there is chocolate in this Guinness recipe. Full ingredients and instructions bellow:
Ingredients:
1 cup Guinness Stout
10 tablespoon unsalted butter
2/3 cup sour cream
3/4 cups unsweetened cocoa powder
2 large eggs
1 teaspoon almond extract
1 teaspoon vanilla extract
2 cups all purpose flour
2 cups granulated sugar
2 1/2 teaspoons baking soda
Pre-heat oven to 350 degrees.
Sift dry ingredients (flour and baking soda). Set aside.
Combine sour cream, eggs, and extract. Set aside.
Combine Guinness and butter in a medium sauce pan. Heat until butter is melted. Over medium heat, whisk in the cocoa and sugar until combined. Remove pan from heat. Mix in the sour cream mixture into the butter/cocoa/sugar. Whisk in the dry ingredients until smooth. Scoop batter into cupcakes liners and bake until centers are done (about 17-20 minutes).

for the cracker jack frosting, do you just mix all of the ingredients at once? Or is there a sequence?

its sounds like the flour and powdered sugar should be sifted after measuring. is this true, or should i sift before?
