As you probably know we really like parties around here. And to be honest with you all, one of my favorite parts of planning a party is brainstorming all the food ideas and beautiful ways to serve it. So when I stumbled on pancake bites I knew I had to serve them at some gathering so that’s how these raspberry pancake poppers were born.

Pancake poppers are SO GOOD (in all caps because that’s just how good they are) and they are incredibly easy to make at home. Another great thing is that they are just as good to serve at a party than to serve them at a weekend breakfast at home. Just like the french toast bites these raspberry pancake poppers are the perfect addition to a morning brunch, think a bridal shower, a baby shower or even a little get together with friends and family.

Oh, and can we please talk about how easy they are to make? You just mix all the ingredients together and then bake the batter in a cupcake pan and that’s about it. For me, one of the most important things about party food is that it has to be easy to make since you are going to be baking a big batch + planning lot of extra little things at the same time.

PANCAKE POPPERS: TOPPINGS GALORE!

And while I topped mine with raspberries (since they are summery and fresh and oh so cute!) you can go ahead and have fun with the toppings! Top ones with chocolate chips ones with peanut butter others with sprinkles or fresh fruits! Having variations is great for a party since there will be something for everyone. You can also add some syrups and extra toppings to your table and call it a pancake poppers bar, in my opinion, maple syrup is a must.

Raspberry Pancake Poppers

Ingredients
  

  • ½ Cup raspberries - fresh or frozen
  • 1 Cup flour
  • 1 Egg
  • 1 Cup buttermilk
  • 1 Tbsp sugar
  • 1 tsp vanilla
  • 1 tsp baking powder

Instructions
 

  • Preheat the oven to 350 degrees. Grease and flour a cupcake pan.
  • In a bowl mix the flour, egg, buttermilk, sugar, vanilla, and baking powder until everything's well incorporated.
  • Divide the batter between the cupcake pan.
  • Press some raspberries on top and take to the oven.
  • Bake for 15 minutes or until done.
