Let’s Do Lunch

“Only the pure of heart can make good soup.” Beethoven

Creamy Broccoli Soup
1 10-ounce package of frozen chopped broccoli
1 cup chicken broth
1 medium onion, chopped
1 teaspoon nutmeg
1 can cream of mushroom soup
1 teaspoon butter, softened
2 cups sour cream
Combine the broccoli, chicken broth, onion, and nutmeg in a saucepan and bring to a boil. Cover and simmer for 5 minutes. Pour this hot mixture into a blender and add the can of mushroom soup and butter. Blend until smooth. Next add the sour cream and blend five seconds. This soup is delicious served hot or cold. Serve the soup cold in chilled long stemmed wine glasses or hot in individual bread bowls or your favorite bowl. To make the bread bowls, buy small round loaves of hearty bread. Slice off the top and remove the inside, leaving a bread shell. Fill with hot soup and serve immediately.
