Goat Cheese: Use a plain, soft goat cheese log. For a milder taste, try cream cheese or mascarpone as a substitute.

- Spoon over fig preserves (or fig jam) to the top of the goat cheese log. Be generous!

- Serve with your favorite crackers or crostini.

Ingredients
- 8 ounce goat cheese log
- 3 tbsp fig preserves - (or fig jam)
- 1/4 cup pistachios - chopped
- 1 tbsp honey
- Crackers or crostini for serving
Instructions
- Chop pistachios in a shallow plate. Roll goat cheese log in pistachios, pressing them into the sides and top of goat cheese.
- Place goat cheese log on serving platter.
- Spoon fig preserves over the top and sides of the goat cheese log. If fig preserves are thick, stir well and microwave for 5 seconds to make them more spreadable.
- Drizzle honey on top of the goat cheese log.
- Sprinkle extra chopped pistachios on top.
- Serve with your favorite crackers or crostini!
