I’m one of those people that starts celebrating my birthday on November 1 (it’s the 19th). Why not? Life is too short not to celebrate all month long. So while I love traditional birthday cake, I also love celebrating my birthday in the morning. So what am I going to whip up for myself this year? Breakfast Birthday Coffee Cake! Quite possibly the cutest version of coffee cake I’ve ever seen! You can make it large or mini like mine!

King Arthur Flour recently released these Essential Goodness Mixes, and I’m smitten. My husband – who prides himself on being a coffee cake connoisseur – told me it tastes better than any of my homemade recipes. Well, there you have it! There are lots of them in addition to the Sour Cream Coffee Cake, you can see them all here.  I’m already eyeing the Vanilla Bean Cheesecake Bars!

How to make a birthday cake out of coffee cake!

So step 1 in this Breakfast Birthday Cake is obviously making the Sour Cream Coffee Cake! It’s super simple, and the instructions are easy to follow. Now, use 3 tiered round cookie cutters to create your cake layers. If you want thinner layers, bake your coffee cake in a larger pan.

Step 2 is easy, friends! Stack them up, add a party candle, some cute plates, and you’re ready to celebrate! This is such a cute idea to wake kids up on their birthdays. Or let the kids help make it for another family member – all of the mixes are super kid-friendly! I know my daughter will definitely be helping with this fun idea next week (it’s my husband’s birthday on Wednesday!).

Besides tasting downright amazing, here is why I love these…

  • Simple Ingredients: Essential Goodness mixes are made with pure, simple ingredients like real lemon, sour cream, and vanilla bean. No artificial colors or flavors, no hydrogenated oils, no preservatives,no corn syrup and all mixes are sourced non-GMO. Can I get a HOORAY!
  • Straightforward Instructions: The steps are simple and it is ready in less than an hour! It takes 38-42 minutes when baked in a square pan and 40-50 minutes in a bundt-style pan. I made mine in a square pan so that I could easily cut out three tiered sizes. As for items needed to add to the mix, you’ll only need 1 stick of butter total, 3/4 cup milk, and 2 large eggs.
  • Easy to Adapt: You can easily follow the instructions right along or you can put your own tasty twist on it! So cover it with a glaze, add sprinkles, do whatever your heart desires! My friends at King Arthur Flour have a few fun ideas to get you started – check them out here!
  • Buy a mix, give a meal: For every mix purchased, King Arthur Flour donates the cost of a meal to Feeding America, the nation’s largest organization dedicated to fighting domestic hunger. There is no limit or end date to the campaign, and King Arthur commits to donating a minimum of one million meals in the first year of sales.

If you’re like me and running around everywhere 99mph, these mixes are a lifesaver. Let me talk about the number of times I need to whip up a little treat: bake sales, meetings, neighbor gifts, teacher gifts, birthdays, holidays, tailgating, house guests…. y’all understand, it’s a lot! These taste amazing and you can keep them on hand for whenever the need for deliciousness strikes.

Thanks to King Arthur Flour for sponsoring this tasty idea!

  1. Oh man, coffee cake for a birthday breakfast? Sign me up for that! This looks like my kind of birthday cake for sure!!

    1. Yes, I mean one should definitely also enjoy “regular” birthday cake later in the day but we all know birthdays start the minute you get up! Or in my case, the 1st day of the month.
