Mini Banana Split Pies
Today happens to be National Banana Lover’s Day, but I’ve been dying to share this recipe with ya’ll for quite some time! Banana splits are such a happy dessert, and mini pies are just so darn cute, so why not combine the two?!
The best thing, it’s a super easy + customizable recipe! I’m going to share how I made mine but there are lots of tweaks here and there that you can make to fit your own needs and tastes.
Mini Banana Split Pies
Yields 12 mini pies
INGREDIENTS
mini frozen pies
3 ripe bananas
1 cup milk
1 cup heavy cream
1/4 cup cornstarch
1/4 tablespoon salt
1 tablespoon vanilla extract
1 1/4 cup sugar
whipped cream topping
maraschino cherries
mini chocolate chips
sprinkles
1 pint vanilla ice cream
DIRECTIONS
Start by adding 2 ripe bananas, milk, heavy cream, vanilla extract, salt, and cornstarch to electric mixer or food processor. Blend or mix well until thoroughly combined. Pour into medium saucepan over medium heat and stir regularly until bubbling. Remove from heat and let cool.
Bake frozen pie crusts on baking sheet at 325 degrees for 10-12 minutes (or until light golden brown). Remove and let cool.
Fill bottom of each mini pie crust with cooled banana filling. Â Top with 2 to 3 tablespoons of vanilla ice cream on each mini pie. Add whipped topping. Slice third banana and garnish each mini pie with banana slices, maraschino cherries, chocolate chips, and sprinkles!
Other toppings that would be delish: fudge sauce, caramel sauce, peanut butter chips, etc…Â
