I originally created these delicious watermelon coolers for one of my favorite sites – Style Me Pretty! Founder and creator Abby Larson is a fellow Vanderbilt Grad, and I’ve truly loved following her successes for years! She’s an inspiration to so many other bloggers, including myself.

Watermelon coolers are not only easy to make, they’re so refreshing! Down here in Nashville, it gets pretty hot during the summer so the only thing I want to be sipping on is something FROZEN. Watermelon is one of my favorite summer fruits so we always have one or two in the refrigerator. Do yourself a favor and try this recipe if you’re looking for a summer cocktail.

The coconut milk does something magical to these watermelon coolers. It adds a touch of creamy that gives it an indulgent texture. You’ll find yourself going back for a second, trust me. I’ve served these up at several summer parties, and my friends are constantly asking for that “watermelon drink recipe” again and again!

You can jazz these up by garnishing with a watermelon or lime slice! I’ve also received a lot of questions over the years about these tall, slender glasses. I adore them! They’re originally from World Market. You could certainly serve these in any glass style from a stemless champagne to a highball. It doesn’t have to be fancy, especially if you’re just making them for a weeknight treat.

For parties, you can jazz it up with a garnish like I mentioned above. Or use lime juice to rim the glasses with granulated sugar. Add in a fun straw, and you’re ready to party!

Watermelon Cooler Cocktail Recipe

Watermelon Cooler

A refreshing summer cocktail full of watermelon and lime!

Course Drinks

Ingredients
  

  • 4 cups cubed, seedless watermelon chilled
  • 1/4 cup fresh-squeezed lime juice
  • 1/3 cup white rum
  • 1 cup ice cubes
  • 1/4 cup coconut milk

Instructions
 

  • Add all ingredients to blender and blend until smooth. Fill glasses and garnish with a lime wedge or small watermelon slice. Enjoy!
