Beach Table: Fun in the Sun!
Excursions are always exciting. So find a spot on the beach to stretch out and wiggle your toes in the sand. Smell the salt water and feel the sunshine on your face because it’s that time of the year. Don’t forget that double wide beach towels in vibrant summer colors work well as table toppers too.
Shrimp Casserole
3 pounds of shrimp, peeled, deveined, and cooked
2 cups wild or brown rice, cooked
1 can cream of mushroom or celery soup
1 cup sharp cheese, grated
1 cup celery, chopped
1/2 cup scallions, chopped
1/2 cup green bell pepper, chopped
1/2 cup butter
3 lemons, thinly sliced
Combine the shrimp, rice, soup, and cheese until well blended. Next saute the celery, scallions, and bell pepper in the butter until tender and then add the shrimp mixture. Pour into a 9 x 13-inch casserole dish. Top with the thinly sliced lemons. Bake covered for 20 minutes at 375. This casserole freezes well too.
Yields: 6 servings
