I love dulce de leche in all forms, like in my Ooey Gooey Dulce de Leche Cookie Bars that I love. I wanted to create a fudgy, chocolate version of that brownie and after a few tweaks and adjustments, I have the most delicious dulce de leche brownies! I know you’ll love them too!

Ingredients for Dulce De Leche Brownies
BROWNIE BOX MIX: I love Ghirardelli Brownie box mix (they have several types, a chocolate supreme that is super delish but any will do) but use what you have! Or make your own brownie batter from scratch! NOTE: You’ll need whatever ingredients are called for on the back of the brownie box too (often an egg and vegetable oil too) so take note.
SWEETENED CONDENSED MILK: We make a semi-homemade “dulce de leche” for this recipe with a can of sweetened condensed milk. The standard 14 oz can is all you need. I recommend Eagle Brand Sweetened Condensed Milk.
CARAMELS: Look for the bag of Kraft Caramels in the candy or baking aisle. You’ll have to unwrap them all, but it is very worth it! Promise!
BUTTER: A stick of butter, I most often use salted butter but unsalted butter will work fine too. I usually pull it out to warm to room temperature for faster melting.
How to Make Dulce de Leche Brownies
First things first, whip up your brownie batter in a large bowl and pour all but 1 cup (reserve this back and set aside) of the batter into an 8-inch baking pan lined with parchment paper or sprayed with baking spray. You can certainly use a 9-inch as well, they’ll just be slightly thinner. Bake at 325 degrees for 20 minutes. Remove from oven.
In a saucepan over medium heat, add the rest of the ingredients (sweetened condensed milk, caramels, and butter). Stir often to prevent burning! Once everything is melted (it could take 10 minutes or so) then spread this dreamy caramel layer over the baked brownies.
Now comes the fun part! Remember that extra 1 cup of brownie batter? Drop it in spoonfuls all over the dulce de leche layer. Use a knife or spoon to swirl the dulce de leche caramel layer into the brownie batter! You’ll get pockets of dulce de leche in every bite! Ooey gooey delicious.
Return the brownies to the oven and let bake another 25 minutes. Baking time can vary so watch them carefully. They will set up as they cool, but the dulce de leche layer stays consistently ooey gooey!
I like to add a little sprinkling of course sea salt on top for extra indulgence! It really brings out the chocolate flavor!
Store any extra brownies in an airtight container for up to 3 days. They are truly the best brownies so don’t be surprised if you don’t have any leftover! :)
You can top these gooey chocolate brownies with a big scoop of ice cream for an a la mode dessert or enjoy a bar as-is with a big glass of milk! Just a warning, they are rich and they are GOOD. You might find you’ll be making them again very soon. They’re not the cut-into-perfect-squares type of brownies, however. These are ooey gooey and oh so perfect.
Dulce de Leche Brownies
Ingredients
- 1 box chocolate brownie mix - or homemade chocolate brownie batter
- 1 14-ounce bag caramels - unwrapped
- 1 14-ounce can sweetened condensed milk
- 1/2 cup butter - (1 stick)
Instructions
- Preheat oven to 325 degrees. Combine brownie mix ingredients. Spray an 8-inch baking pan well with cooking spray. Alternatively, you can line it with parchment paper.
- Reserve 1 cup brownie batter and set aside. Pour the rest of the chocolate brownie batter into the pan and smooth it evenly to reach all sides. Bake for 20 minutes.
- In a saucepan over medium heat, combine caramels, sweetened condensed milk, and butter. Stir often to avoid burning. It could take about 10 minutes, be patient! I like to do this step while my brownies are finishing in the oven.
- Once caramels have completely melted, spread dulce de leche mix over the partially baked brownies.
- Drop remaining brownie batter in spoonfuls on top.
- Use a knife to swirl together the brownie batter and dulce de leche mixture.
- Return to oven for 25 minutes. Remove from oven and allow to cool completely. These are super ooey gooey so let them set up a bit before trying to cut them into squares.
