Girl Scout Poke Cake Cupcakes
Hey Pizzazzerie readers! It’s Cara from One Swell Studio here! Were you a Girl Scout growing up? I was! My favorite part (other than earning badges & crafting) was definitely the cookies. Not so much the selling of the cookies– but definitely the eating of the cookies. My childhood favorite was the Trefoils Shortbread. Currently, I’m a Samoas-loving gal. I’m pretty sure everyone has a favorite cookie flavor.
And the good news? The Girl Scouts of America have released three new cookie flavors for 2015! The new (mouth-watering) flavors include:
Rah-Rah Raisins, an oatmeal raisin cookie with Greek yogurt-flavored chunks
Trios, a cookie made with peanut butter, chocolate chips and whole grain oats
Toffee-tastic, a rich buttery cookie with toffee bits
How exciting is that?! To tide you over before those little Girl Scouts come knocking on your door, I’ve “cupcake-ified” these new flavors for you. To make it easy as can be, all of the flavors only require one type of boxed cake mix– you can mix and match flavors to your heart’s content. And, to take things up one more notch, I “poke-cake-ified” the cupcakes to make them even more indulgent. Hold onto your merit badges. This is going to get good.
Here’s what you’ll need for each of the flavors (please note that there is some overlap).
Rah-Rah Raisin
French Vanilla Cake Mix
Vanilla Yogurt Covered Raisins (mix-in)
Sweetened Condensed Milk (for drizzling)
Cool Whip (for topping)
Trios
French Vanilla Cake Mix
Old Fashioned Oats (mix-in)
Semi Sweet Chocolate Chips (mix-in)
Peanut Butter (mix-in)
Sweetened Condensed Milk (for drizzling)
Cool Whip (for topping)
Toffee-tastic
French Vanilla Cake Mix
2 Heath Toffee Chocolate Bars
Caramel Ice Cream Topping (for drizzling)
Cool Whip (for topping)
To start, follow the pre-heating instructions on the back of your cake mix. Add the ingredients as shown on the box. (If you’d like to make a richer-tasting cake, you can always substitute milk for water & melted butter for the vegetable oil.) Line a muffin pan with cupcake liners– I suggest the double-liners that have both paper and foil since we will be creating miniature poke cakes for this recipe. Fill each of the liners 2/3 of the way full and use a fork or bamboo skewer to pop any air bubbles.
Depending on the flavor you’d like to create, add 1 tbsp of the ‘mix-in’ items designated. (For Rah-Rah Raisin, mix in Vanilla Yogurt Covered Raisins. For Trios, mix in Old Fashioned Oats, Semi Sweet Chocolate Chips & Peanut Butter. I did not mix anything into the Toffee-tastic cupcakes.)
Bake for the suggested time and remove cupcakes from the oven.
While the cupcakes are still warm, use a bamboo skewer to poke 6-7 holes in each of the cupcakes. Drizzle the specified liquid (either caramel or sweetened condensed milk) on the “poked” cupcakes and allow it to sink in. Place the cupcakes in the refirgeratior and allow to chill for 2-3 hours.
Using a piping bag, (or a simple Ziplock bag with a corner cut off), frost the cupcakes with Cool Whip. Add some of the ‘mix-in’ items to the top of each cupcake depending on the flavor. Crush up a Heath Bar and sprinkle it over the Toffee-Tastic cupcakes– so good! Pop a few yogurt covered raisins on the Rah-Rah-Raisin cupcakes. Cute, cute!
Enjoy these with a friend or entirely by yourself. I won’t tell. Scout’s honor.

At my council we can’t buy the toffee and trio cookies, only the raisin ones, and I sooooo want to try them! Maybe this is just the thing!
