Bell Pepper Baskets
We LOVE making these bell pepper baskets for an anniversary or engagement dinner. They would even make a great addition to the upcoming Memorial Day weekend! They are quite simple to make and you can fill with your favorite vegetable salad! Adding pops of color to your table with these bell pepper baskets will have your guests WOW’ing all night!
To make the bell pepper baskets, simply use a knife to cut halfway around the pepper leaving a 1-inch wide handle. Scrape out the seeds and cut away any of the white pulp. Fill with black bean salad or your favorite dish before serving! To make the stars, use the leftover pepper pieces. Just use a 1-inch star cookie cutter, stick it down into a skewer stick and into the basket! Garnish the basket parsley or basil leaves and you have a fantastic dish!
Nina’s Black Bean Salad
1/3 cup red wine vinegar
1/3 cup olive oil
3/4 teaspoon salt
1/2 teaspoon pepper
3 garlic cloves, minced
3 cans black beans, drained & rinsed
1 can white corn, drained
1 red pepper, chopped
1 green pepper, chopped
1 red onion, chopped
Mix together the vinegar, oil, salt, pepper, and garlic. Let stand for 30 minutes. Add this marinade to the beans, corn, peppers, and onion. Toss to coat well. Cover and refrigerator at least 8 hours or overnight. A wonderful substitute for potato salad and great for picnics since it requires no mayonnaise.

This is great! I love peppers, and what a great way to incorporate them on your table!! Nina’s Black Bean Salad looks delicious! And I adore the pepper stars… too cute!
My anniversary is next month…too bad my husband hates pepeprs. Is it rude if I make the baskets just for myself? Because I LOVE them and this looks super good!
Such a cute idea to make it into a basket!! Eric WOWed me by making bell pepper bowls for our salsa the other day when my parents were in town….I was so impressed with his creativity & now that a related idea is on pizzazzerie, it confirms the cuteness!! :)
