What I love about this recipe is just how easy it is to adjust to your liking! I live in Charleston so fresh shrimp is aplenty so I made shrimp Caesar salad, but you could make these with chicken too! Of course frozen shrimp will work beautifully for this recipe, so not to worry if you don’t live near the coast.

Making the parmesan cups isn’t hard, but there are a few tips I can share that will make it a lot easier!

Tips for Making Parmesan Cups

  • I recommend using a high-quality grated parmesan cheese.

  • Spread out the grated parmesan in a round shape (about 3 inches or so) on a parchment lined baking sheet. Be sure to separate your cheese rounds as they will spread a bit, leave about two inches between them.
  • After you remove the pan from the oven, let it cool about 30 seconds before scooping each round up with a spatula and laying over a small bowl (flipped upside down) or even a mini-muffin tin (flipped upside down). Use a paper towel and gently press it down and around the bowl.

  • The size of your bowl is not only determined by how much cheese you use but what you decide to wrap it around. You can even use a shot glass! You can play around with various sizes (like a regular muffin pan for a larger parmesan cup).
  • Once the parmesan cups are wrapped around your little glass or bowl, carefully lift it off and it’s ready to use!
  • You can make these in advance and store in an airtight container for up to two days.

Serving Shrimp Caesar Salad Parmesan Cups

The rest is simple! Just fill up the crispy parmesan cups with your favorite salad like a simple caesar topped with sautéed shrimp! Aren’t these little salad cups so pretty? I love individual servings for dishes too, they’re perfect for entertaining.

I like to serve mine on a pretty platter (mine is from Juliska, a favorite for trays and platters). They’re perfect for a large party spread because guests can easily pick up their parmesan cup. Salads can be trickier to serve on little party plates, so this makes serving a salad so much easier!

Shrimp Caesar Salad Parmesan Cups

Crispy parmesan cups filled with a tasty caesar salad topped with zesty shrimp!

Equipment

  • 1 baking sheet
  • parchment paper
  • spatula

Ingredients
  

  • 6 ounces grated parmesan cheese
  • 3 cups romaine lettuce - finely chopped
  • 1/2 cup croutons - crumble slightly to make smaller croutons
  • Caesar salad dressing - to preference
  • 12 medium shrimp - sautéed (I suggest a zesty seasoning)

Instructions
 

  • Preheat the oven to 350℉ and line a baking sheet with a piece of parchment paper.
  • Spread out 3-inch rounds of grated parmesan cheese (leaving at least 2 inches between the rounds). You will want to do this in a couple of batches so you can work quickly to shape them.
  • Bake in the oven for 4-5 minutes or until the cheese has melted and is golden and bubbly. Watch carefully as they can burn quickly. Remove the pan from the oven and let sit for 30 seconds.
  • Working quickly but carefully, slide a spatula under each cheese round and lay it over your rounded glass (or muffin tin, flipped upside down). Using a paper towel over the cheese, gently press it down to mold around the vessel. Once cooled, carefully lift off.
  • Repeat steps until you have 6 parmesan cups.
  • Add caesar salad dressing to chopped romaine lettuce and fill each parmesan cup with a scoop of salad.
  • Top with sautéed shrimp and a garnish of croutons.

Notes

If you’re having trouble with the cheese rounds, be sure you’re making them thick enough and baking until they are bubbly. Let them cool slightly before lifting off and directly over your vessel you’re shaping them on top of. 
Substitute in your favorite protein (grilled chicken, steak, fish, tofu, etc) for the shrimp! Or leave it off altogether if you prefer. 
Try out different salads instead of caesar. The possibilities are endless for these little parmesan salad cups!
