Happy National Watermelon Day! August isn’t a big holiday month so celebrating watermelon day to the fullest extent is absolutely a-okay with me. This watermelon salad is one of the most refreshing recipes for summer when it’s blazing hot outside, and you just need something cool and delicious. Use a melon baller to create the watermelon balls. You could certainly just use cubed watermelon, but I think the ball-shape is so much prettier for a gorgeous presentation. If you’re hosting a party, prep the watermelon balls in advance and finish each salad with the toppings as you serve them. Or set up a melon ball bar for people to create their own (add in cantaloupe, honeydew – but make sure they’re perfectly ripe – hard honeydew melon is the worst).

Watermelon Salad with Mint and Sliced Almonds

We used sea salt and cracked black pepper almonds on our watermelon salad. I love the little extra touch of savory that it gives the sweet watermelon! You could certainly pick your favorite toppings or skip the almonds altogether.

Watermelon Salad with Mint & Almonds

 A flavorful summer salad!

Ingredients
  

  • 1 cup watermelon balls
  • 1 tablespoon simple syrup
  • 1 tablespoon diced mint
  • 1 tablespoon sliced almonds

Instructions
 

  • Toss together watermelon balls with simple syrup, mint, and almonds. Serve with a garnish of mint. 

Notes

Spice things up with flavored almonds. We love using sea salt and cracked black pepper almonds, found in the salad-topper section. 
To create simple syrup, combine 1 cup sugar and 1 cup water in a saucepan and boil until sugar is dissolved. Allow to cool.
