This watermelon salad is one of the most refreshing recipes for summer when it’s blazing hot outside, and you just need something cool and delicious. Use a melon baller to create the watermelon balls. You could certainly just use cubed watermelon, but I think the ball-shape is so much prettier for a gorgeous presentation. If you’re hosting a party, prep the watermelon balls in advance and finish each salad with the toppings as you serve them. Or set up a melon ball bar for people to create their own (add in cantaloupe, honeydew – but make sure they’re perfectly ripe – hard honeydew melon is the worst).
We used sea salt and cracked black pepper almonds on our watermelon salad. I love the little extra touch of savory that it gives the sweet watermelon! You could certainly pick your favorite toppings or skip the almonds altogether.
Watermelon Salad with Mint & Almonds
Ingredients
- 1 cup watermelon balls
- 1 tablespoon simple syrup
- 1 tablespoon diced mint
- 1 tablespoon sliced almonds
Instructions
- Toss together watermelon balls with simple syrup, mint, and almonds. Serve with a garnish of mint.
