Peach Mojito Cupcakes

I absolutely love peach season! When I was younger, I lived in South Carolina so peaches were a summer staple. These peach mojito cupcakes are the perfect combination of my love for peaches and mojito cocktails! You must also try my peach mojito drink!

Add in some free printable cupcake liners to jazz up the sweet treats and you’re ready for a party! You could even style up an entire peach-themed summer party (or baby shower!) which I think would be fabulously delish.

I’ve been growing mint each year in my backyard, and I have to say, it’s one of the easiest plants to grow. Not only that, but it makes the perfect garnish for these peach mojito cupcakes. So even if you have a black thumb, plant some mint. Trust me, it’s hard to kill. You’ll find yourself using it for cocktails and food too! Yum!

Peach Mojito Cupcakes with Free Printable Liners!

Peach Mojito Cupcakes + Free Printable Liners

Ingredients
  

For the Cupcakes:

  • ½ cup buttermilk
  • cups all-purpose flour
  • teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter - softened
  • 1 cup granulated sugar
  • 2 eggs - at room temperature
  • Zest of 1 lime
  • ¼ teaspoon mint extract
  • 2-3 large peaches - diced

For the Frosting:

  • ½ cup unsalted butter - softened
  • 3-4 cups powdered sugar
  • 2 tablespoons lime juice
  • 2 tablespoons peach juice
  • Peach food coloring - optional
  • Mint and peach slices for garnish

Instructions
 

  • Preheat oven to 325 degrees F. Line a cupcake tin with wrappers.
  • Sift together flour, baking powder, and salt in a mixing bowl.
  • In a separate bowl, beat together the butter and sugar on medium for 3-4 minutes.
  • Add eggs, beating between each addition. Add lime zest and mint extract.
  • Add dry ingredients, a little at a time, alternating with the buttermilk until thoroughly combined. Do not overmix.
  • Fill liners with batter and drop in diced peaches.
  • Bake for 25 minutes or until a skewer inserted in the center comes out clean.
  • For frosting, beat butter until fluffy in a mixing bowl on medium.
  • Add sugar 1 cup at a time, mixing thoroughly.
  • Add juices and coloring. Beat on medium for 2-3 minutes or until fluffy
  • Frost cupcakes and garnish with mint sprigs and peach slices!

    1. I have an HP Laser Printer (from Staples) but you can easily send them to an office store!

    The cupcakes were very delicious, however the “supposed to be” buttercream frosting was very thin and running all over the place… making the cupcakes very messy to eat. I would suggest adding about 2-3 tablespoons of heavy or whipping cream to the buttercream frosting. Overall, the cupcakes were very yummy, and I will certainly make them again!

    1. Thanks, Haley! I’ll try that out when I make them next. Typically, I’ve found that adding more liquid (heavy cream) makes frosting looser. Whereas, more powdered sugar (or less liquid) will thicken it. But I’ll try this recipe again and report back as soon as I can! Thanks :)

  8. Hello, this recipe looks amazing, but I am not from the US and am having trouble finding mint extract here. Can I replace it with Peppermint aroma, and if so, how much less do I need to use?
