How to make CUTE Easter Bunny Tail Treats!

Hippity Hop! Easter is on its way! I have had this little idea in my head for awhile but just found time to play in the kitchen! This recipe is super easy too so you can have the kids help you in the kitchen (especially rolling the balls and coconut). I placed my “bunny tail treats” in cute pink and white polka dot treat boxes. They would also be super cute placed on a cake stand at an Easter Party! However you serve and display them they’re cute and oh so tasty.

How to make CUTE Easter Bunny Tail Treats!

Easter Bunny Tail Truffles

Servings 36 1" treats

Ingredients
  

  • 1 8- ounce package cream cheese softened
  • 4-5 cups powdered sugar
  • 1 teaspoon almond extract you can substitute this for coconut if you want a stronger coconut flavor
  • 2-3 cups sweetened coconut

Instructions
 

  • Be sure cream cheese is softened (can microwave for 10-15 seconds to help).
  • Use an electric mixer with paddle attachment to beat cream cheese until fluffy.
  • Add powdered sugar 1 cup at a time until mixture is a thick dough. If dough is able to hold shape in a 1-inch ball, then you're good to go! If it's too sticky, then add more powdered sugar.
  • Roll balls in coconut. If you have trouble with it sticking, just press it in a bit or use a little bit of corn syrup.
  • Enjoy!

      Hi. I am going to try these. They look adorable! My question is, my family members are not huge almond extract fans, can you recommend any substitute? Vanilla maybe? Or perhaps I should just cut down on the amount of almond. Any help would be appreciated!

      Hi Marilyn! Yes, I fluff the cream cheese then add the almond and 1 cup of powdered sugar, beat a bit, then another cup – and so forth.

          Took these to the ladies class and they were a huge hit! Many of the ladies wanted the recipe and some even took a couple of the bunny tails home with them. It even tempted a diabetic to sample it as she loves coconut. This recipe is a keeper!

    I made these with my grandson and we had a blast. We added half of a cherry and almond extract, so yummy. A little sticky, but 5 cups of sugar is enough. Yes, we did put these in the frig.

    Made these today….very sweet but I’m sure my grand kids will love them. Made a little flat card that sad Easter bunny tails n put it in a clear bag from ac Moore with a half dozen tails, tied the bag with ribbon. Very cute!

    hmm, this was a fail for me. It never got stiff enough to roll. Was up to 7 cups of suger!! yikes! The recipe isn’t very clear. Are you supposed to add the coconut to the batter or is it just to roll in? I added in in an attempt to thicken it. It helped but at this point it was waaay too sweet, no sign of the cream cheese. And the almond extract was over whelming. They are so cute. But I am glad I did a run thru before doing this with my grands. I have the batter in the fridge right now. So sad

      Gayle, I had the same problem as you – I kept adding the sugar and it didn’t look stiff enough to roll into balls. What worked for me was to get 2 long ice tea spoons, scope a small amount with one spoon, push the dough off of the first spoon with the second spoon into a bowl filled with the coconut and gather the coconut around the dough. It turns into a ball-shape by itself and you don’t have to use your hands. The coconut is used to cover the ball – you don’t add it to the dough ( unless you want to! ) I also laid my sheet in the refrigerator for a few minutes to be sure the balls were firm enough before sealing them in a container. As for the almond, everyone loved mine using the full amount, but you may want to cut back on the amount or even use a different flavor such as the coconut that Courtney suggests. I had so many people asking me for this recipe. ( one even called me as I was typing this reply to you! ). This really is a wonderful recipe. Hope you have better luck if you decide to try it again!

        thank you for replying so quickly. They did harden up nicely overnight (couldn’t figure out how you packaged those soft balls!! lol) I have another pkg of cream cheese softening as we speak to try again! I was hoping to make these with the grands but now that you have described the process more I can see it’s not a treat for them to make, just to eat. I also stowed the dough in the fridge last night and rolled a few more this morning with a cherry inside. lol I think it may be that my almond is very potent, its a fresh Dr Watkins bottle, not imitation. So I will cut it down on the nest batch. they are so adorable, I just have to keep trying! Have a happy easter!

          Same thing just happened to me, my “dough” never really turned “dough-like” =( I rolled them in the coconut with the spoons, but they still seem a bit mushy to me, will they harden overnight? I’m thinkn of sticking them in fridge in hopes they’ll less mushy, would my guests to have cream cheese frosting all over their hands eating these tomorrow! Lol let me know if there is anything else I should try! Thanks!

            Yes, put them in the refrigerator and they will firm up nicely. Use a sealed container so the coconut will not dry out.

    I love this idea, but was wondering if vanilla extract could be used in place of the almond, and also grated white chocolate instead of coconut since my family is not fond of it.

      BitsyBet – I made them with orange extract and they were good! So any extract would be fine as long as you like the taste! Also, I tried freezing one last night to see if they would be good, because they are so rich that I can’t eat more than one or two at a time, and I will have too much to stay fresh in the refrigerator. They taste great straight from the freezer! Nice to have on hand for sweet cravings!

    So adorable! Wondering if coconut rum added to the mix would work. My family loves rum balls and this would be a great twist. I am guessing I may need to add crushed vanilla wafers to have the rum soak into. Hummmm I have to play with this one and keep it away from the kids!
