Cute & Delicious Mini Biscoff Pies!
One of my absolute favorite treats is Biscoff. It’s a delicious spread made from the “airplane cookies” and perfect on anything from toast, fruit, to a spoon dipped right inside. I’m oh so thrilled to have had the opportunity to recipe develop for one of my favorite special treats. Biscoff Spread is made in Belgium with all-natural, preservative-free ingredients, vegan, and nut-free! Perfect for those with nut allergies. Plus, I have some super fabulous details about a contest all my resident bakers will not want to miss (you could be on your way to BELGIUM)!
I decided to use the crunchy Biscoff spread to make delectable mini pies. They are oh so cute and perfect for parties! You could certainly make it in a full-size too. I just happen to think minis are the perfect portion size and easy to eat while mixing and mingling. It’s an easy recipe that doesn’t take long at all!
Now, beware! You WILL want to eat the entire jar with a spoon. Resist the urge (ok, maybe one spoonful) because these mini pies are a super huge crowd-pleaser! A few simple baking ingredients and you’re on you way to a delicious new fave. It has brown sugar undertones and a rich flavor that reminds me of fall (oh, fall! those cooler temperatures can’t come soon enough). I also topped mine with a simple Biscoff buttercream for a little extra “pizzazz” but this is totally optional.
First up, we have our mini pies! Now, I find mine in my grocery’s frozen dessert aisle but you can very easily make your own with mini muffin tins as well. I also think this would be delicious with a graham cracker crust too. Pre-bake your mini muffin tins after piercing with a fork. This will help get out the aggression of not being allowed to eat the entire jar.
Pour your pie filling down into the mini pies. Again, easy peasy.
There you have it! Aren’t they pretty? So cute served up on mini doilies too. They’d be perfect for any occasion really! Tie them into little cellophane bags for a quick favor treat or serve them a backyard cookout this summer. However you enjoy them, they are sure to become a new household favorite.

Mini Biscoff Pies!
Ingredients
- 2 pie crusts - or 16 mini pies
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 eggs
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1 cup butter - melted
- 1 cup crunchy Biscoff spread - you can certainly use creamy too
- Buttercream Topping
- 1/2 cup creamy Biscoff spread
- 2 cups powdered sugar
- 2-3 tablespoons heavy cream or milk
Instructions
- Preheat oven to 350 degrees F.
- Pierce pie crusts with a fork on bottom and sides. Pre-bake for 10 minutes.
- Combine sugars, eggs, flour, vanilla, butter, and biscoff and mix well.
- Pour into pie crusts and lower oven temperature to 325 degrees F.
- Bake for 25-30 minutes. Remove from oven and let cool.
- For frosting topping, beat together Biscoff, sugar, and cream until fluffy. Pipe a swirl on center! Enjoy!

“Like” Biscoff on Facebook and upload a Biscoff Spread photo with a title and description. Entrants may submit one additional photo for each referred friend. Please note, all qualified entrants must submit their photos between July 1 (12 a.m. EST) – July 28 (11:59 p.m. EST). Facebook fans will vote for the grand prize winners between August 5 (12 a.m. EST) – August 25 (11:59 p.m. EST).
The top three winners will be announced on Facebook on August 30.
