I love brunch, y’all. Want to know why? Mimosas! Any excuse to enjoy a cocktail before 11:00 am is my kind of celebration. I happen to ADORE mimosas.
Cherry Mimosas
Now, the traditional orange juice mimosa is perfectly fine and dandy but we’re all about adding pizzazz around these parts so the cherry mimosa was born! It’s sweet and sparkling with a touch of tartness. Shh.. it also only has 2 ingredients. Brunch cocktail WIN!
Cherries are one of those fruits that I never really know what to do with. Except turn into a cocktail, duh. As far as eating though…I hate the pit! Annoying! They are a lot of work to eat, BUT the taste is quite possibly my favorite ever. I love it paired with almond. I love it paired with chocolate. I just LOVE IT.
So I had to work around my hatred of the cherry pit which isn’t too difficult these days because you can find tart cherry juice (AND black cherry juice) in your grocery aisles. Score! This makes hostess duties a lot easier because the days leading up to a party can be quite hectic.
Check the organic section to find the pure cherry juices (not “made from concentrate” sugary stuff).
You could also call these “cherry sparklers” too. I know traditional mimosas aren’t served with ice, but I liked the addition to keep it extra chilled to beat this southern summer heat. Up to you of course! And because I like to give you fun ideas, you could even freeze cherry juice in ice cube trays to use as well.

These cherry mimosas are made with two simple ingredients: tart cherry juice and champagne! If you happen to use a very dry champagne, you can add a little simple syrup to sweeten these mimosas to taste.

Ingredients
- 3 ounces tart cherry juice
- 3 ounces champagne or sparkling wine
- cherries for garnish
Instructions
- Pour champagne over cherry juice and cheers!

If you don’t want to water your cocktail with ice cubes, you could freeze the cherries (without the pit) and add them to the drinks to keep them cold.
