I really love a Flank or Skirt Steak for these tacos, but you could use any cut you fancy. Flank steak is delicious, lean and when cut thinly, it’s perfect for adding on to tacos! Pineapple Marinade for Steak

This marinade is super simple, uses easy ingredients and really infuses the steak with so much flavor! All you need is soy sauce, pineapple juice, brown sugar, minced garlic and cumin.

I love grilling my tortillas, whether they’re corn or flour. Grilling adds a subtle smokiness and texture that I love. You can easily skip this step if you prefer.

While the grill is nice and hot, remove your steak from the marinade and place it on the grill. Enjoy that sizzle! According to the USDA’s rules they determine temperature doneness as 145 medium rare, 160 medium and 170 is well done, use a meat thermometer to cook to your desired temperature.

Grilled Flank Steak

This quick and easy pineapple salsa is perfect for topping your grilled steak tacos. It’s full of flavor, super colorful, and adds a refreshing taste that truly takes the tacos to the next level. I love to serve extra with tortilla chips for dipping too!

Now it’s time to assemble those tacos! Thinly slice your grilled steak, add several strips to your corn tortilla and top with fresh pineapple salsa. If serving at a dinner party, load them up on a tray garnished with lots of fresh lime and cilantro for garnishing.

This recipe is hands-down my favorite for those backyard al fresco dinners with friends and neighbors. It’s the perfect summer grilling meal, bringing everyone together for a delicious, fun-filled evening.

Fire Up the Grill: Make your tablescape even more inviting by grilling these delicious steak tacos right next to it! The aroma of the sizzling steak is the perfect accompaniment. Plus, your friends and family can enjoy fresh-off-the-grill tacos!

Embrace Nature: Add in garden clippings like ferns to your floral arrangements. Keep them simple and low in height to encourage conversation. I also added in rosemary sprigs to each place setting. Did you know rosemary is a naturally deters those pesky mosquitos?

Play With Colors: Summer is carefree and relaxed so don’t worry about a formal color scheme. Keep it simple with patriotic hues like blues, whites or reds. Mix and match patterns for a fun, eclectic look.

Layer Textures: Combine different textures can create a unique tablescape that’s naturally gorgeous. Think cane placemats and woven rattan votives with ceramic plates and bamboo cutlery. Again, mix and match what you have to create your table.

Ambient Lighting: As the sun sets, keep in mind lighting for your backyard dinner. I love simple votive candles for a glowing touch along with string lights too. There are many cordless tabletop lamps now that are perfect for indoor/outdoor use as well.

Steak Tacos with Pineapple Salsa

The grilling recipe your friends and family will love! Delicious grilled steak tacos with a tasty pineapple salsa!

Ingredients
  

  • 2 pounds Beef Flank or Skirt Steak – trimmed

For the Marinade:

  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tablespoons brown sugar
  • 1 tablespoon ground cumin
  • 2 cloves garlic - minced

For the Tacos:

  • 2 cups pineapple - diced
  • 1 red bell pepper - chopped
  • 1/3 cup red onion - diced
  • 1 jalapeno - seeded and diced
  • 1/4 cup fresh cilantro - chopped
  • 1 lime - freshly squeezed
  • 1 teaspoon lime zest

Instructions
 

  • In a small bowl, whisk together the soy sauce, pineapple juice, brown sugar, ground cumin, and minced garlic. Place the steak in a sealable bag and pour in the marinade. Massage the marinade into the steak, then lay the bag flat in the refrigerator for at least 1 hour or overnight for best results.
  • In a medium bowl, combine the diced pineapple, chopped red bell pepper, diced red onion, diced jalapeno, and chopped fresh cilantro. Add the lime juice and lime zest. Mix well and set aside.
  • Preheat the grill to medium-high heat. Place the corn tortillas on the grill for about 30 seconds on each side, until warmed and slightly charred.
  • Remove the steak from the marinade and place it on the preheated grill. Grill for about 7-11 minutes, flipping occasionally, until a slight char is achieved on the outside and the steak reaches your desired level of doneness. According to the USDA’s rules they determine temperature doneness as 145 medium rare, 160 medium and 170 is well done, use a meat thermometer to cook to your desired temperature. Remove the steak from the grill and let it rest for at least 5 minutes. Thinly slice the steak against the grain into strips.
  • Place the grilled steak strips onto the corn tortillas. Top with the prepared pineapple salsa. Serve immediately and enjoy!
