I‘m eager to welcome in soup season! Soup or bisques are perfect for crowds, making them fabulous for fall entertaining! This pumpkin bisque recipe in pumpkin shells is my new favorite way to enjoy a night with friends and family.

Growing up in a creative family, I have grown accustomed to thinking outside the box – especially for food and entertaining. My Mom created projects for craft/wedding/entertaining magazines and coming home from school to tablescapes scattered throughout the house was a common occurrence. Clearly, the apple didn’t fall far from the tree. My older brother is also a food blogger so when the three of us are together, we’re always in the kitchen reinventing new ways to serve up delicious recipes.

We were recently tweaking our favorite pumpkin bisque recipe for the fall holiday season and talking about how we loved sipping on fruity drinks right out of the fruit (like a pineapple). Then it hit us, serve this pumpkin bisque down in mini pumpkins. I’ve always loved setting a mini pumpkin at each place setting so this new twist was perfect. Thus, these little pumpkin shells were born. They would be fitting for more than just bisque, however! Try dips, salsa, desserts, anything!

Pumpkin Bisque in a Pumpkin Shell

A delicious fall soup that’s perfect for a party, try this pumpkin bisque in a pumpkin shell!
SERVINGS 4 servings
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients
  

  • 4 mini pumpkins
  • 15 ounces pumpkin puree - 1 can
  • 11 ounces butternut squash - pureed
  • 2 cups chicken broth
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon pepper
  • 12 ounces evaporated milk - 1 can
  • 1/4 cup sour cream
  • sprigs of parsley or thyme for garnish

Instructions
 

  • Slice the top of mini pumpkins off and scoop out the seeds and flesh inside.
  • In a saucepan over medium heat, combine pumpkin, squash, broth, and seasonings. 
  • Stir until combined. 
  • Add in evaporated milk and stir. Simmer for 15 minutes. 
  • Pour directly into mini pumpkins.
  • Garnish with sour cream, dash of cinnamon, and parsley sprig. Serve! :)
