Cinco de Mayo is almost here so why not add a little festive flair to the traditional margarita? There’s nothing exactly wrong with a plain ol’ lime margarita, but hello – when you can make it more fun – do it!

Coconut Grapefruit Margarita Ingredient Tips
- 4 ounces ruby red grapefruit juice
- 1 1/2 ounces lime juice
- 1 1/2 ounces silver tequila
- 1 tablespoon cream of coconut
- 1 ounce triple sec or Grand Marnier
- salt or sugar for rim
Cream of Coconut
I use “cream of coconut” in this recipe which you can find in most grocery stores near the cocktail mixers. It’s a sweet coconut flavor (often used when making pina coladas) that balances the tart grapefruit very well!
Here is the brand I used if you have trouble finding it near you. You could experiment with coconut water, coconut milks, etc. I just find this cream of coconut to be the perfect addition!
Because the cream of coconut is thick, I mix all of this in the blender so I can just pulse it for a few seconds and incorporate the cream of coconut so it’s fully blended. You could certainly add ice and make frozen coconut grapefruit margaritas.
Coconut Garnish
I used large flaked coconut (my local Fresh Market had them packed as “coconut chips”) as a garnish (you know how I love to dress up a cocktail) but you certainly don’t have to use it! You could even use shredded coconut but again, if you like coconut flavor but not actual coconut pieces, leave them off. Or garnish with a wedge of grapefruit or lime. The flavor of the coconut in the drink is from the cream of coconut.
Make-Ahead Margaritas
Prep these coconut grapefruit margaritas ahead of time if you’re having a party. Just mix it up pitcher-size and keep refrigerated for a few hours. They’re perfect for Cinco de Mayo or frankly any type of party! Since they’re a pale pink, I happen to think they’re pretty fitting for bridal showers, bachelorette parties, girls nights, etc!
Coconut Grapefruit Margaritas
Ingredients
- 4 ounces ruby red grapefruit juice
- 1 1/2 ounces lime juice
- 1 1/2 ounces silver tequila
- 1 tablespoon cream of coconut
- 1 ounce triple sec or Grand Marnier
- salt or sugar for rim
Instructions
- Rub a slice of lime around the rim of your glasses and dip in salt or sugar. Combine grapefruit juice, lime juice, tequila, cream of coconut, and triple sec in blender. Pulse for 10-15 seconds or until throughly combined. Pour over ice and enjoy!
