Strawberry Baked Brie
If there is one thing I love, it’s an easy brie appetizer that can be prepped and served in minutes. Brie is typically a fall/holiday dish for me, but all has changed around here. I’ve given brie a spring/summer makeover with amazing balsamic strawberries and walnuts!

Strawberry Balsamic Baked Brie
When it comes to entertaining, I like easy, quick-to-assemble appetizers that you can make while catching up with your guests around the kitchen island. That’s where everyone in my house congregates so a fussy recipe that takes a long time is a no-go! This brie takes just 5 minutes to assemble and into the oven it goes for a quick warming. Easy!
Baked brie is one of my favorite appetizers. During the holidays, I love to make my Sparkling Cranberry Baked Brie, but during warmer months (and especially strawberry season), this Strawberry Baked Brie hits the spot! It’s the perfect addition to a charcuterie board too!
Balsamic vinegar does something magical to the roasted strawberries. It brings out their sweetness without being too much of an overwhelming vinegar taste. Trust me, I understand if you’re a skeptic of this combo, but it’s delightful. The strawberries get ever-so-slightly roasted while baking and the walnuts are perfectly toasted when done.
However, if you’re not into balsamic, then you can absolutely leave it out for a milder taste. My daughter loves it either way but she prefers the strawberries without the balsamic vinegar (she’s 6) – but it’s delicious both ways!
Speaking of walnuts, I absolutely love the crunch they add, but you can select your favorite nut or leave them out altogether. Whatever your heart desires! :)
Make it mini: To create mini version of this appetizer, you could cut small slices of brie and place on top of sliced baguette rounds. Top with the strawberry balsamic mixture and top with chopped nuts. Similar idea, but pulled together in a prepped, bite-size manor.
Have you seen mini baked brie cheese wheels at your grocery store yet? I’ve only seen them a handful of times, but they would be a fun twist for this recipe if you wanted to make minis a different way!

Switch it up! You could also make this with camembert or any similar soft cheese as well as using raspberries or blackberries in place of strawberries! Peaches would also be a delicious twist.
